Easy Salmon w/ Carrots & Potatoes 

I was getting really hungry tonight and kept contemplating ordering pizza/wings (I know.. I know) and decided it probably wasn’t the best move. I also have the house to myself for a change and decided that making food would perhaps be the most plausable thing to do. I created this recipe on the spot while I was making it, but I’m sure its been done before in other wonderful variations. This recipe is also wonderfully simple and tastes so damn good. 

Salmon Dish with Carrots & Potatoes

(Recipe is for 2 servings)

Ingredients

2 large whole sliced carrots 

6-10 sliced baby potatoes 

1/4 cup chopped White Onion

5-6 minced cloves of garlic

1-2 teaspoons spices (your choice, I used montreal steak spice for this recipe)

1/4 cup Vegetable oil

2 whole salmon portions

Pinch of Salt & Pepper

2 lemon wedges

Step 1: Cut your veggies

First, gather your vegetables and cut them up appropriately as indicated above. Of course if you are making this meal for more than two people, more quantities of veggies would be appropriate depending on the # of guests. 

What would cooking a delicious and healthy meal be without a fresh glass of chardonnay? 

Step 2: Add veggies to pan and cook

Add olive oil to cooking pan, add veggies and a pinch of salt and pepper. Fry for about 10 minutes while stirring consistently.

Step 3: Add Salmon to pan and cook

Add unfrozen salmon portions to pan with veggies, add appropriate spices and cook on both sides until golden brown. Leave veggies in pan and continue cooking. Keep adding spices based on your preference.

Step 4: Ready to eat!

Once salmon and veggies are thoroughly cooked (this can be checked by cutting small piece of salmon and checking to see if pink) add to plates and cut a fresh lemon wedge. Squeeze lemon juice onto salmon.

Result:

I made this as a quick meal because I was hungry and wanted something healthy and I ended up LOVING it. The spices combined with the veggies were perfection and I was glad I cooked the veggies first and then added the salmon. Anyone, regardless of cooking skill level, could easily whip up this dish which makes it that much more amazing! Next time I make this dish I will likely add apple cider vinegar just because I’ve been wanting to cook with it for a while
